Centrum area is full of good coffeeshops, but there may come
a time when you want to escape the hordes of rubberneck
tourist groups, the brashness of the "red light" district
and the souvenir shops full of overpriced crap for something
quieter.

organic food - including, when I last visited some time ago

in the Jodenhoek, the traditional Jewish area of
Amsterdam.
Spread
over 3 floors with a very good menu and very probably the
most comfortable seating of any coffeeshop in Amsterdam -
